• 3 celery
• 100 g butter
• 3 potatoes
• 3 egg yolks
• 1 l milk
• Half fresh cream
• 100 g bread

How to Make Cream of celery:
First peel, wash and clean celery well. Then place them in boiling water briefly, until we see that whitening. Then drain them and cut them into chunks.
Then put the pieces of celery in a saucepan with the butter. Add milk and potatoes washed, peeled and cut into thin slices. Salted to your taste and cook the mixture over low heat for 90 minutes.
Once cooked the mixture, pass through a fine sieve. If you have been too thick, you can add a little milk.
Then we bring the cream to a boil again and mix with egg yolks and a dash of cream. Meanwhile fry the pieces of bread with butter.
Serve warm with slices of fried bread on top.
